The nerdy side of me likes to do lots and lots of things. Like go to the library incessantly, listen to talk radio, and dream of being a political speech writer. This nerdiness takes other forms as well, such as trying to figure out how to make everything myself – from deodorant to barbeque sauce to my own clothes. One major manifestation of this nerdiness is reading meal plans. I LOVE finding new recipes and get bored out of my mind making the same thing more than a few times. Seeing other people’s meal plans is the perfect fix for this obsession. Also, seeing my own meal plans helps me remember those few meals that I do want to repeat. Thus, I give you this week’s meal plan, with a few new meals on it and my reviews thereof.
**We drink smoothies for breakfast everyday, and lunches are always leftovers or sandwiches, unless otherwise noted.
Monday Night – Black Bean Mango Quinoa Delicious and very filling. I ate it for four meals since I doubled the amount of quinoa, and added an avocado to make it extra satisfying. Will definitely make again, and wouldn’t change a thing.
Tuesday Night – Eggplant Parmesan Rollatini Also very good. I added two links of chicken sausage to the marinara sauce, and forgot the parmesan cheese in the filling so just dusted it on top (haha). Would definitely make it again, but perhaps with larger eggplants or sliced a bit thicker, since they shrunk during the initial baking. Will also spray with olive oil instead of dip the slices in it. Made great leftovers as well.

Thursday Night – Chicken, Red Bell Pepper, Onion and Zucchini Shish Kebabs
Friday Night – Homemade Pizza
